Preparing the Cutlet

Prepare the Chicken or Eggplant

If using chicken, pound the breasts to about 1/2 inch thickness. If using eggplant, slice it into 1/2 inch rounds and sprinkle with salt. Let sit for 15 minutes to draw out moisture.

Breading Station

Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs mixed with salt and pepper.

Bread the Cutlet

Dredge the chicken or eggplant in flour, dip in egg, and coat with breadcrumbs. Make sure they are fully covered.

Fry the Cutlet

In a large skillet, heat olive oil over medium heat. Fry the breaded cutlets for about 4-5 minutes on each side, or until golden brown and cooked through. Drain on paper towels.

Toast the Bread

Lightly toast the crusty bread rolls until golden.

Build the Sandwich

Spread mayonnaise on the bottom half of each roll. Add lettuce, followed by the fried cutlet, sliced tomato, and hot sauce to taste. Place the top half of the roll on and press down gently.
