Dough Preparation
Activate Yeast
In a small bowl, combine warm water (about 110°F) with sugar and yeast. Let it sit for about 5-10 minutes until frothy.
Prepare Dough
In a large mixing bowl, combine flour and salt. Make a well in the center, then add the yeast mixture, milk, and melted butter. Mix until a dough forms.
Knead Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth. Place in a greased bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour or until doubled in size.
Roll and Fold Butter
Once the dough has risen, roll it out into a large rectangle. Place a cold butter block in the center and fold the dough over it. Roll out again and fold into thirds. Repeat this process 3-4 times to create layers.
Shape Medialunas
After the final fold, roll out the dough into a large rectangle and cut it into triangles. Roll each triangle from the base to the tip to shape the medialunas.
Proof and Bake
Place the shaped medialunas on a baking sheet lined with parchment paper. Cover and let rise for another 30-40 minutes. Preheat the oven to 375°F (190°C). Brush with egg yolk and bake for 15-20 minutes until golden brown.
