Method

Ribeye Steak

Prepare the Steak

Season the ribeye steak with salt and black pepper on both sides. Heat olive oil in a skillet over medium-high heat.

Cook the Steak

Add the steak to the skillet and cook for 4-5 minutes on each side for medium-rare. Adjust time for preferred doneness.

Rest the Steak

Remove the steak from the skillet and let it rest for at least 5 minutes before slicing.

Prepare the Potatoes

Wash and peel the russet potatoes. Cut them into thick fries.

Heat the Oil

In a deep pot, heat vegetable oil to 350°F (175°C).

Fry the Potatoes

Fry the potato slices in batches until golden brown and crispy, about 5-7 minutes per batch.

Season the Fries

Remove the fries from the oil, drain on paper towels, and sprinkle with salt.

Creamed Greens

Sauté the Garlic

In a saucepan, heat a small amount of olive oil over medium heat and sauté the minced garlic until fragrant.

Add the Spinach

Add the fresh spinach to the saucepan and stir until wilted.

Make the Cream Sauce

Pour in the heavy cream, season with salt and black pepper, and cook until the sauce thickens slightly.

Red Wine Jus

Sauté the Shallots

In the same skillet used for the steak, add diced shallots and sauté until translucent.

Add Wine and Stock

Pour in the red wine and beef stock, scraping the bottom of the pan to release the fond. Let it reduce by half.

Finish the Jus

Whisk in butter and season with salt and black pepper to taste.
