Parisienne Gnocchi

Method

Prepare the Gnocchi

Cook Potatoes

Boil the chopped potatoes until tender. Drain and let cool slightly.

Make the Dough

Mash the potatoes and mix in flour, beaten egg, and salt until a dough forms.

Shape Gnocchi

Roll the dough into ropes and cut into bite-sized pieces.

Cook Gnocchi

Boil gnocchi in salted water until they float. Remove and set aside.

Prepare the Piperade

Sauté Vegetables

In a pan, heat olive oil and sauté onion, garlic, and bell peppers until soft.

Add Tomato Paste

Add tomato paste, salt, and pepper. Cook until well incorporated and set aside.

Prepare the Ginger Scallion Sauce

Mix Ingredients

In a bowl, combine ginger, scallions, soy sauce, sesame oil, and rice vinegar. Mix well.

Grill the Salmon

Prepare the Grill

Preheat the grill to medium-high heat.

Season Salmon

Brush salmon fillets with olive oil, and season with salt and pepper.

Grill Salmon

Place salmon on the grill and cook for about 4-5 minutes per side, or until cooked through.

Assemble the Dish

Plate the Dish

On each plate, place the piperade, top with grilled salmon, and drizzle with ginger scallion sauce. Serve gnocchi on the side.
