Preparation Steps

1

Prepare the Porcini

Soak the dried porcini mushrooms in warm water for about 30 minutes until softened. Drain and chop them finely.

2

Sauté the Aromatics

In a large skillet, heat the olive oil and butter over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.

3

Cook the Chicken Livers

Add the chicken livers to the skillet and cook for about 5-7 minutes until they are browned on the outside but still slightly pink inside.

4

Add the Mushrooms and Port

Stir in the chopped porcini mushrooms and pour in the port wine. Let it simmer for an additional 5 minutes, allowing the alcohol to evaporate and the flavors to meld.

5

Finish with Mulled Wine Jelly

Remove the skillet from heat and stir in the mulled wine jelly until melted and well combined. Season with salt and black pepper to taste.

6

Serve

Transfer the chicken liver mixture to a serving dish, garnishing with fresh thyme. Serve warm with crusty bread or crackers.
