Ensure the shrimp are peeled and deveined. Pat them dry with paper towels to remove excess moisture.

In three separate shallow dishes, place the all-purpose flour in the first dish, the beaten egg in the second dish, and a mixture of shredded coconut, panko breadcrumbs, salt, and black pepper in the third dish.

Dip each shrimp first into the flour, then into the beaten egg, and finally coat with the coconut-panko mixture. Ensure they are evenly coated and set aside on a plate.

Heat the Oil

In a large, deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Shrimp

Carefully add the breaded shrimp to the hot oil in batches to avoid overcrowding. Fry for 2-3 minutes on each side or until golden brown and cooked through. Use a slotted spoon to transfer the shrimp to a paper towel-lined plate to drain excess oil.
