Method
Prepare espresso
Brew
Brew two shots (about 60 ml) of fresh espresso using an espresso machine or a stovetop Moka pot. Use freshly ground dark-roast beans and extract directly into a pre-warmed cup to preserve temperature.
Combine with brandy
Measure 30 ml of Spanish brandy. If using sugar instead of simple syrup, add 1 tsp sugar to the bottom of a heatproof serving glass (small coffee glass or lowball).
Optional — flame (traditional method): Pour the brandy into a small metal measure, briefly warm it (do not overheat), then carefully ignite the brandy with a long lighter or match and set the measure over the glass to briefly flame the sugar and brandy for 5–8 seconds. Extinguish flame by covering or letting it burn out. (Skip this step for a no-flame version.)
Pour the hot espresso directly over the brandy and sugar in the serving glass. Stir gently for 5–10 seconds until sugar dissolves and ingredients are combined.
Finish & serve
If you used a citrus twist, express the oils over the surface by holding the twist over the drink and pinching, then rub the peel around the rim and drop it into the drink or rest on the rim.
Garnish with 1–2 whole coffee beans if desired. Serve immediately while hot.
