Prepare the Dough

In a bowl, combine warm water, sugar, and yeast. Let sit for 10 minutes until foamy. In a large mixing bowl, combine flour and salt. Add the yeast mixture, milk, and beaten egg. Mix until a dough forms.

Knead the Dough

Turn the dough onto a floured surface and knead for about 10 minutes until smooth. Place in a greased bowl, cover, and let rise in a warm place for 1 hour or until doubled in size.

Prepare the Butter Block

While the dough rises, place the butter between two sheets of parchment paper and pound it with a rolling pin into a flat square about ½ inch thick. Refrigerate until ready to use.

Laminate the Dough

Roll out the dough on a floured surface into a rectangle. Place the butter block in the center and fold the dough over it. Roll out and fold in thirds (like a letter). Repeat this process two more times, refrigerating the dough for 30 minutes between folds.

Shape the Croissants

After the final fold, roll the dough into a large rectangle. Cut triangles and roll each triangle from the base to the tip. Place on a baking sheet lined with parchment paper.

Proof the Croissants

Cover the shaped croissants and let them proof for about 1 hour until puffy.

Bake the Croissants

Preheat the oven to 400°F (200°C). Brush the croissants with an egg wash (beaten egg with a little water) and bake for 15-20 minutes until golden brown.
