Position an oven rack in the highest third of the oven and place a pizza stone or inverted heavy baking sheet on the rack. Preheat the oven to 500°F (260°C) for at least 45 minutes so the stone is thoroughly heated.

If using refrigerated dough, let it rest at room temperature for 30 minutes to relax the gluten for easier stretching. Lightly dust a work surface and your hands with flour.

Stretch or roll the dough into a roughly 12-inch round, leaving a slightly thicker rim for the crust. Transfer the stretched dough to a well-floured pizza peel or an inverted baking sheet lined with parchment for easy transfer.

Just before baking, brush the exposed crust lightly with about 1 tablespoon of the garlic herb oil to encourage browning and flavor.

After the pizza is finished baking, immediately brush any remaining garlic herb oil over the crust edges and scatter the fresh basil leaves over the hot pizza. Finish with a light sprinkle of the Mediterranean sea salt to taste.

Sauce & cheeses

Spread the San Marzano sauce evenly over the stretched dough, leaving a 1/2-inch border for the crust. Use about 3 ounces (roughly 1/3 cup) for a thin, balanced layer.

Distribute the Fior di Latte pieces evenly over the sauced surface so the cheese melts into creamy pockets. Scatter the shredded low-moisture mozzarella evenly to provide a slightly firmer, stretchy texture.

Toppings

Prepare the Italian sausage: remove casing (if present) and crumble into a skillet over medium heat. Cook until browned and cooked through, about 6–8 minutes, breaking it into small pieces. Drain excess fat on paper towels and blot lightly; reserve warm sausage.

If your mushrooms and red peppers are not already roasted: toss sliced mushrooms with 1 tsp garlic herb oil and a pinch of salt, spread on a sheet and roast at 425°F (220°C) for 12–15 minutes until browned. Roast red pepper strips at the same temperature for 10–12 minutes until slightly charred. Let cool slightly and pat dry to avoid excess moisture on the pizza.

Distribute the cooked sausage evenly over the cheese layer, followed by the roasted mushrooms and roasted red pepper strips. Arrange toppings so the pizza remains balanced and not overloaded, which helps even cooking and a crisp crust.

Baking

Slide the pizza (on the parchment or directly from the peel) onto the preheated pizza stone or inverted baking sheet. Bake at 500°F (260°C) for 8–10 minutes, rotating halfway through if necessary, until the crust is blistered and golden and the cheese is melted and bubbling.

If you prefer a slightly more charred top, switch to broil for 30–60 seconds at the end—watch carefully to prevent burning.

Remove the pizza from the oven and transfer to a cutting board. Let rest 2 minutes, then finish as noted in the Dough & finishing section (brush crust with remaining garlic herb oil, scatter fresh basil, and sprinkle Mediterranean sea salt to taste). Slice and serve hot.
