Cook bacon

Place a cold, large skillet (cast-iron or heavy nonstick) on the stove. Lay the bacon slices in a single layer without overlapping. Turn heat to medium and cook, flipping occasionally, until the bacon is crisped to your liking, about 8–12 minutes depending on thickness. If using, sprinkle 1/4 tsp black pepper over the bacon while cooking. Transfer cooked bacon to a paper towel–lined plate to drain and keep warm.

Beat eggs

Crack the 4 large eggs into a medium bowl. Add 3 tablespoons milk or cream, 1 teaspoon salt, and 1/2 teaspoon freshly ground black pepper. Whisk vigorously until the mixture is uniform and slightly frothy (about 20–30 seconds).

Heat pan and melt butter

Use the same skillet or a clean nonstick pan and warm it over medium-low heat. Add 1 tablespoon unsalted butter and let it melt and foam but not brown. Reduce heat to low–medium so the eggs cook gently.

Cook eggs slowly

Pour the beaten eggs into the pan. Let them sit undisturbed for a few seconds until the edges just begin to set. Using a silicone spatula, gently push the eggs from the edges toward the center in broad strokes, creating soft curds. Continue moving the eggs every few seconds; cook slowly to keep them creamy. Remove from heat when they are still slightly underdone — glossy and soft — as residual heat will finish them. This should take about 3–5 minutes total depending on pan temperature.

Finish and season

Stir in the optional chopped chives (1 tbsp) and adjust seasoning to taste. If you want richer eggs, you can add a small knob (1 tsp) of butter at the end and fold it in.

Toast bread

While the eggs are cooking or bacon is resting, toast 4 slices of bread until golden and crisp using a toaster or under a broiler. If preferred, heat a skillet over medium, add 1 tsp oil or butter and toast each slice 1–2 minutes per side until golden.

Butter toast

Spread about 1 tablespoon butter across the 4 slices while still warm so it melts into the bread.

Assemble

Arrange two slices of toast per serving. Divide the scrambled eggs evenly across the toasts, then top each with 2 slices of cooked bacon (or crumbled bacon if preferred). Finish with an extra grind of black pepper and a sprinkle of chopped chives if using. Serve immediately.
