Beef Patties
Make the mixture
In a large bowl combine ground beef, bread crumbs, egg, Worcestershire sauce, salt, black pepper and garlic powder. Mix gently with hands or a fork until ingredients are just combined — avoid overworking the meat.
Shape patties
Divide the mixture into two equal portions. Gently form each portion into a round patty about 3/4 inch thick and slightly wider than the buns (they will shrink when cooked). Make a shallow dimple in the center of each patty with your thumb to help them cook evenly.
Cook patties
Heat 1 tablespoon vegetable oil in a heavy skillet or cast-iron pan over medium-high heat until shimmering. Add patties and cook without moving for 3-4 minutes until a brown crust forms. Flip and cook 3 minutes more for medium (adjust time for desired doneness). In the last 1 minute of cooking, place a slice of cheddar on each patty and cover the pan to melt the cheese. Transfer cooked patties to a plate and rest for 3 minutes.
Buns & Toppings
Assemble burgers
Spread 1 tablespoon mayonnaise on the bottom half of each bun and 1/2 teaspoon mustard on the top half. Place lettuce on the mayo, then the cheesy beef patty, tomato slices and a few rings of red onion. Close with the top bun and press gently.
Fries
Prepare potatoes
Wash and peel (optional) the potatoes. Cut into 1/3-1/2 inch thick sticks. Rinse cut fries under cold water until water runs clear to remove excess starch, then pat completely dry with clean kitchen towels or paper towels.
Fry in two stages
Pour oil into a heavy saucepan or deep fryer to a 2-3 inch depth and heat to 160°C (320°F). Working in batches, fry potatoes 3-4 minutes until soft but not browned. Remove and drain on a rack or paper towels. Increase oil temperature to 190°C (375°F). Fry batches again 2-3 minutes until golden and crisp. Drain on paper towels and immediately season with 1 teaspoon salt and optional 1/2 teaspoon paprika; toss to coat.
Salad garnish
Dress salad
In a small bowl whisk together olive oil, lemon juice, 1/4 teaspoon salt and a pinch of black pepper. Place mixed greens and cucumber in a bowl, drizzle dressing over them and toss gently to combine.
Plate
On each plate place the assembled burger, a generous handful of fries, and a small portion of dressed salad greens as a garnish. Serve immediately while hot.
