Cheesecake Preparation

Prepare the Crust
Preheat the oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

Bake the Crust
Bake the crust in the preheated oven for about 10 minutes, then remove and let it cool while preparing the filling.

Prepare the Filling
In a large mixing bowl, beat together the cream cheese and granulated sugar until smooth. Add the sour cream and vanilla extract, mixing until well incorporated. Then, add eggs one at a time, mixing on low speed until just combined.

Combine and Pour
Pour the cream cheese filling over the cooled crust in the springform pan, smoothing the top with a spatula.

Bake the Cheesecake
Bake in the oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and crack the door open, allowing the cheesecake to cool slowly in the oven for about an hour.

Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight, before serving.
