Preparation
Mix the Dry Ingredients
In a large bowl, combine the flour, baking powder, salt, and sugar.
Add the Fat
Cut in the lard or vegetable shortening until the mixture resembles coarse crumbs.
Add the Wet Ingredients
Stir in the warm water and milk until the dough forms a ball. Knead the dough on a floured surface for about 5 minutes.
Rest the Dough
Cover the dough with a clean towel and let it rest for 30 minutes.
Cooking
Roll Out the Dough
On a floured surface, roll out the dough to about 1/4 inch thick. Cut into squares or triangles.
Fry the Sopapillas
Carefully drop the pieces of dough into the hot oil. Fry until they puff up and turn golden brown, about 2-3 minutes per side.
Draining
Remove the sopapillas from the oil and drain on paper towels.
