Preparation
1. Blanch the Green Beans
Bring a large pot of salted water to a boil. Add the haricots verts and cook for 3-4 minutes until bright green and tender-crisp. Drain and immediately plunge them into ice water to stop cooking. Drain again and set aside.
2. Prepare the Coppa
While the beans cool, slice the coppa into thin strips and set aside.
Dressing
3. Make the Lemon Dressing
In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper until well combined.
Assembly
4. Combine Ingredients
In a large mixing bowl, toss the cooled haricots verts with the lemon dressing. Add the sliced coppa and mix gently.
5. Serve with Ricotta
Plate the dressed beans and coppa mixture, then dollop ricotta cheese on top. Garnish with sliced almonds and fresh basil if using.
