Method
Prepare Spätzle
Make the Dough
In a mixing bowl, combine the flour and salt. Make a well in the center, add the eggs, and gradually mix in the water until a smooth batter forms.
Cook the Spätzle
Bring a large pot of salted water to a boil. Using a Spätzle maker or a colander, press the batter into the boiling water. Cook until the spätzle floats to the surface, about 2-3 minutes. Remove and drain.
Prepare Labneh
Make the Labneh
Place the yogurt in a cheesecloth or fine mesh strainer over a bowl. Sprinkle with salt and let it drain in the fridge for at least 12 hours or overnight.
Finish Labneh
Once thickened, transfer the labneh to a serving bowl, drizzle with olive oil, and sprinkle with fresh herbs if desired.
Cook Broccoli and Assemble
Assemble the Dish
In a serving dish, layer the spätzle, followed by a dollop of labneh, topped with sautéed broccoli and a sprinkle of chopped pistachios.
