Preparing the Bhajis
Prepare the Zucchini
Grate the zucchini and place it in a bowl. Add salt and let it sit for about 10 minutes to draw out excess moisture. Squeeze out the water and set aside.
Mix the Batter
In a mixing bowl, combine chickpea flour, ground cumin, turmeric powder, and minced jalapeño. Gradually add water to form a smooth batter.
Combine Ingredients
Add the grated zucchini to the batter and mix until well combined.
Fry the Bhajis
Heat sunflower oil in a deep pan over medium heat. Drop spoonfuls of the mixture into the hot oil and fry until golden brown, about 3-4 minutes on each side. Remove and drain on paper towels.

Make the Yogurt Sauce
In a small bowl, mix yogurt and pureed rhubarb. Add salt to taste and stir until smooth.
