Meanwhile, prepare an ice bath with 2 cups ice and cold water. After 10 minutes, transfer eggs to the ice bath and chill 10 minutes to stop cooking and make peeling easier.
Gently crack shells and peel eggs under running water. Pat dry and slice eggs lengthwise. Remove yolks and place yolks in a medium mixing bowl; reserve whites on a platter for filling.
Filling
Mash the reserved yolks with a fork until crumbly and mostly smooth.
To the yolks add mayonnaise, Dijon mustard, white wine vinegar, chopped dill pickle, smoked paprika, kosher salt, and black pepper. Mix thoroughly until smooth and creamy. Adjust seasoning to taste — add an extra 1/4 tsp salt or 1/2 tsp vinegar if needed.
Transfer the yolk mixture to a piping bag or a resealable plastic bag with a corner snipped (or use a spoon). Pipe or spoon the filling back into the egg white halves, mounding slightly.
Cold smoking (finish)
Prepare a cold-smoke setup: use a small tabletop smoker, smoking box, or an improvised method (a smoking tube or a foil packet of soaked wood chips on a hot element) that produces smoke but little heat. If using a grill, set for indirect heat and keep temperature below 90°F / 32°C to avoid cooking eggs further.
Place a small handful of soaked applewood or hickory chips on the heat source or in the smoker box. If needed, add a teaspoon of neutral oil to help wood chips smolder in a foil pan. Allow smoke to establish for 1–2 minutes.
Remove eggs from smoker. Dust lightly with smoked paprika and sprinkle with sliced chives, crumbled bacon (if using), and a pinch of sea salt flakes. Serve immediately or chill up to 2 hours before serving. If chilled, allow 10 minutes at room temperature before serving to best appreciate the smoke aroma.
