Prepare jalapeños
Preheat your smoker or grill to 225°F (107°C) for a low-and-slow smoke. Wash and dry the jalapeños. Wearing gloves if preferred, slice each jalapeño lengthwise and remove the seeds and membranes with a small spoon to reduce heat and create a cavity. Rinse out any loose seeds and pat dry. Lightly season the inside cavities with about 1/4 tsp kosher salt total (divide across peppers).
Make filling
In a small bowl, combine the softened cream cheese (4 oz) with 1 tsp finely minced chipotle pepper in adobo, 1 tsp freshly ground black pepper, and 1 oz grated smoked cheddar. Fold in the 2 oz very finely diced smoked sausage so it is evenly distributed. Taste and adjust seasoning; add a pinch more salt if needed. The filling should be homogeneous and spreadable.
Stuff peppers
Spoon the chipotle cream cheese and sausage mixture into each jalapeño half, packing it so it is level with the pepper rim but not overstuffed. You should get roughly 1/2 oz–1 oz of filling per half depending on pepper size. Wipe any excess from the pepper edges.
Wrap with bacon
Cut each slice of bacon in half crosswise. Wrap one half-slice of bacon around each stuffed jalapeño half, with the seam on the bottom. Secure the bacon with a toothpick pushed through the bacon into the pepper (use one toothpick per pepper). If you prefer a slightly sweet glaze, sprinkle about 1/4 tsp brown sugar on each wrapped item or brush lightly with a 1 tsp oil mixed with the sugar.
Smoke or grill
Place the wrapped jalapeños directly on the smoker grates or on a foil-lined tray if you prefer easier cleanup. Smoke at 225°F (107°C) for 45–60 minutes until bacon is cooked through and slightly crispy and the filling is hot and bubbly. If using a grill, maintain low indirect heat (225–300°F/107–149°C) and close the lid. Optionally, for extra crispness, move the bombs to direct heat or a preheated 400°F (204°C) oven for 3–5 minutes at the end—watch closely to avoid burning.
Finish and serve
Remove toothpicks and transfer jalapeño bombs to a serving platter. Let rest 5 minutes—this firms the filling and reduces risk of burning. Garnish with an extra dusting of smoked paprika or chopped fresh cilantro if desired (not included in ingredient list). Serve warm as an appetizer. Estimated yield: (4) whole smoked jalapeños (8 halves) depending on presentation.
