Heat a medium saucepan over medium heat. Add the olive oil and warm for 30 seconds.

Add the finely diced onion and a pinch of salt. Sauté, stirring occasionally, until the onion is very soft and starting to caramelize, about 12–15 minutes. Reduce heat if onions brown too quickly.

Stir in the minced garlic and cook 30–45 seconds until fragrant, taking care not to burn it.

Add the tomato paste and cook, stirring constantly, for 2–3 minutes to caramelize and remove raw tomato flavor.

Pour in the tomato sauce and water, scrape up any browned bits from the pan, and bring to a gentle simmer.

Sweeteners & Umami

Stir in the brown sugar, maple syrup, tamari, and gluten-free Worcestershire sauce until dissolved and incorporated into the simmering base.

Smokey & Spices

Add smoked paprika, ground cumin, ground mustard, chipotle powder (or chopped canned chipotle), black pepper, and kosher salt. Whisk to combine.

Reduce heat to low and let the sauce gently simmer, partially covered, for 20–25 minutes, stirring occasionally, until slightly thickened and flavors meld.

Turn off the heat and stir in the lemon juice and butter (or olive oil) until melted and glossy. If using liquid smoke, add 1/2 to 1 tsp now and taste — it’s potent.

For a very smooth sauce, let cool slightly then transfer to a blender or use an immersion blender to puree until smooth, about 30–60 seconds. If you used canned chipotles, blend to fully incorporate.

Taste and adjust seasoning: add more salt, sugar, vinegar, or chipotle to balance sweet, sour, salty, and smokey notes. If desired, stir in red pepper flakes to taste.

Return to low heat and warm through for 2–3 minutes before serving, or cool and store.
