Combine base ingredients
In a medium saucepan, combine 1 cup ketchup, 1 cup honey, 2 tablespoons apple cider vinegar, and 2 tablespoons packed brown sugar. Whisk until the sugar is mostly dissolved and the mixture is smooth.
Season and thin
Add 1 tablespoon gluten-free tamari, 1 teaspoon smoked paprika, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon ground mustard, 1 teaspoon black pepper, and 1/2 teaspoon salt. Add 2 tablespoons water to reach a pourable consistency. If you want a little heat, stir in 1/4 teaspoon red pepper flakes.
Cook and meld flavors
Place the saucepan over medium-low heat. Bring just to a gentle simmer while stirring frequently to prevent scorching. Reduce heat to low and simmer gently, uncovered, for 8–12 minutes, stirring every 1–2 minutes, until the sauce thickens to a glossy, coat-the-back-of-a-spoon consistency. The honey will integrate and the flavors will mellow during this time.
Taste and adjust
Taste and adjust seasoning: add more salt for savoriness, more vinegar for brightness, or an extra tablespoon of honey if you want it sweeter. If the sauce is thicker than desired, whisk in up to 1–2 tablespoons additional water, 1 teaspoon at a time, until you reach the preferred consistency.
Finish and store
Remove from heat and stir in 1 teaspoon neutral oil for shine if desired. Let cool slightly, then transfer to a clean jar. Use warm as a glaze (brush on during last 5–10 minutes of grilling or baking) or chilled as a dipping sauce. Refrigerate in an airtight container for up to 2 weeks; rewarm gently before using as a glaze.
