Combine base liquids

In a medium saucepan, combine 2 cups gluten-free tomato ketchup, 1 cup apple cider vinegar, and 1 cup water. Whisk until smooth to create the sauce base.

Add 3 tbs packed light brown sugar, 2 tbs molasses, and 1 tbs Dijon mustard to the saucepan. Whisk to dissolve the sugars and incorporate the molasses and mustard.

Sauté aromatics

Heat 1 tablespoon unsalted butter or neutral oil in a small skillet over medium heat. Add 1/2 cup finely chopped yellow onion and sauté until translucent and slightly caramelized, about 5–7 minutes. Add 3 minced garlic cloves and cook 30–45 seconds until fragrant. Transfer the softened aromatics to the saucepan.

Prepare habaneros safely

Using gloves (recommended), remove stems and seeds from 2 whole habanero peppers if you want slightly less raw heat; keep some seeds for extra heat. Roughly chop the peppers.

Add the chopped habanero peppers to the saucepan along with 2 tsp smoked paprika, 1 tsp ground cumin, 1 tsp onion powder, 1 tsp garlic powder, 1 tsp freshly ground black pepper, and 1 tsp kosher salt. Stir to combine.

Bring the saucepan to a gentle boil over medium-high heat, then reduce heat to low and simmer, uncovered, for 15–20 minutes. Stir occasionally to prevent sticking. The peppers and aromatics will soften and infuse the liquid.

Taste (carefully) with a clean spoon and adjust sweetness or acidity: add 1 tablespoon honey if you want more sweetness or an additional 1 teaspoon apple cider vinegar if you want more tang.

Finish & Texture

Blend for smoothness

Remove the saucepan from heat and allow the mixture to cool for 5 minutes. Transfer the sauce in batches to a blender or use an immersion blender to puree until completely smooth. If you prefer chunkier sauce, pulse briefly and leave some texture.

Adjust thickness (optional)

If the sauce is too thin, make a slurry by mixing 1 teaspoon cornstarch with 1 teaspoon cold water. Return blended sauce to low heat and whisk in the slurry. Simmer 2–3 minutes until it thickens. If sauce thickens too much, stir in up to 1/4 cup apple juice (or water) to reach desired consistency.

Stir in 1 tablespoon fresh lime juice to brighten flavors. Re-taste and adjust salt, sweetness or heat as needed.

Cooling & Storage

Cool the sauce to room temperature. Transfer to sterilized jars or bottles and refrigerate. Sauce will thicken slightly as it cools. Keeps refrigerated up to 3 weeks; for longer storage, freeze in portions for up to 3 months.

Use as a glaze, dipping sauce, or marinade. Shake well before using. Note: heat builds over time—sauce may taste hotter after sitting overnight.
