Make the marinade
In a medium bowl whisk together apple cider, gluten-free soy sauce (tamari), apple butter, maple syrup, apple cider vinegar, and brown sugar until smooth. Add grated ginger, minced garlic, red chili flakes, smoked paprika, black pepper, kosher salt and the neutral oil. Whisk until combined and the sugar begins to dissolve; the mixture should be pourable and glossy, with a bright sweet-and-spicy aroma reminiscent of candy apple.
Marinate the chicken
Pour half of the marinade over the chicken, reserving the other half for glazing and finishing. Seal the bag or cover the bowl and refrigerate for at least 1 hour, preferably 4–6 hours. For best flavor, marinate up to 12 hours. If marinating more than 4 hours, turn the chicken occasionally so it soaks evenly.
Cook the chicken
Remove the chicken from the fridge 20 minutes before cooking to take the chill off. Preheat a large skillet or grill pan over medium-high heat. Lightly oil the pan or brush the chicken with a little oil. Remove each thigh from the marinade (shake off excess) and sear 4–5 minutes per side until nicely caramelized and an instant-read thermometer inserted into the thickest part reads 165°F (74°C). If cooking in an oven, preheat to 400°F (200°C) and roast on a sheet pan 18–22 minutes, basting once with reserved marinade (see note about glazing).
Make the glaze
While the chicken cooks, transfer the reserved marinade to a small saucepan and bring to a simmer over medium heat. Whisk together cornstarch (or arrowroot) and cold water to make a slurry, then slowly whisk the slurry into the simmering marinade. Simmer gently 2–3 minutes until the sauce thickens and becomes glossy. Taste and adjust heat or sweetness: add more chili flakes for heat or a little more maple syrup for extra candy-like sweetness. Remove from heat.
Glaze and rest
During the last 1–2 minutes of cooking, brush the thickened glaze over the chicken to build a shiny candy-apple coating; if roasting, brush once halfway through and once after cooking. Remove chicken to a cutting board and let rest 5 minutes so juices redistribute.
Finish and serve
Slice or serve thighs whole. Spoon any remaining warmed glaze over the chicken. Garnish with thinly sliced green onions and toasted sesame seeds if using. Serve immediately with rice, steamed vegetables or a crisp salad to balance the sweet-spicy profile.
Safety note
Do not reuse raw marinade that contacted raw chicken unless you boil it for at least 1–2 minutes (the recipe calls for simmering the reserved marinade which makes it safe to use as a glaze).
