Bloom gelatin

Sprinkle 1.5 tsp gelatin powder evenly over 3 tbsp cold water in a small bowl. Let sit 5–10 minutes until gelatin absorbs the water and becomes spongy.

Prepare vanilla

If using a vanilla bean: split lengthwise and scrape seeds with the back of a knife. If using extract, measure it and hold for later.

Heat dairy and sugar

In a small saucepan, combine 1 cup whole milk, 1 cup heavy cream, 1/4 cup granulated sugar, and a pinch of salt. Add vanilla seeds plus pod (or omit pod if using extract). Warm over medium heat, stirring occasionally, until sugar dissolves and mixture is steaming but not boiling (about 5–7 minutes). Do not let it reach a rolling boil.

Incorporate gelatin

Remove saucepan from heat. Remove vanilla pod if used. Add the bloomed gelatin to the hot cream mixture and whisk until fully dissolved, about 30–60 seconds. If using vanilla extract, stir in 1 tsp now.

Strain and chill

For a silky texture, pass the mixture through a fine-mesh sieve into a measuring cup or bowl with a spout. Pour evenly into 4 serving glasses or ramekins. Let cool to room temperature (20–30 minutes), then cover each loosely with plastic wrap and refrigerate until set, about 4 hours (or at least 2 hours for a softer set).

Quick Berry Compote

Combine and cook

In a small saucepan, combine 2 cups mixed berries, 2 tbsp granulated sugar, 1 tbsp lemon juice, and 2 tbsp water. Cook over medium heat, stirring occasionally, until berries release juices and soften, about 6–8 minutes.

Adjust consistency

If you prefer a chunkier compote, mash gently with the back of a spoon once berries are soft and remove from heat. For a smoother sauce, simmer 1–2 minutes longer and press through a coarse sieve. Let the compote cool to room temperature; it will thicken slightly as it cools.

Cool for assembly

Taste and adjust sweetness or acidity with more sugar or lemon juice if needed. Cool completely before spooning over set panna cotta to avoid melting it.

Finish & Serve

When panna cotta is set, spoon 2–3 tablespoons of the cooled berry compote over each serving.

Garnish each with a sprinkle of grated lemon zest, a mint leaf, and a few toasted almond slices if using.

Serve cold. Panna cotta can be made up to 48 hours ahead (keep covered) and add compote and garnishes just before serving.
