Preheat oven to 300°F (150°C). Line a rimmed baking sheet with aluminum foil.
Prepare the ribs: remove the silver skin membrane from the back of the ribs if still attached. Pat ribs dry with paper towels.
Make a dry rub by combining brown sugar, paprika, salt, black pepper, garlic powder, and onion powder in a small bowl. Rub the mixture evenly over both sides of the ribs.
Place ribs meat-side up on the foil-lined baking sheet. Pour apple cider vinegar and 1 cup water into the bottom of the baking sheet (not over the ribs) to create steam while cooking.
Tent the ribs tightly with a second sheet of aluminum foil, sealing edges to trap steam. Bake in the preheated oven for 2 to 2.5 hours, or until meat is very tender and pulling away from the bone.
Let ribs rest for 5 minutes. Slice between bones into individual portions. Keep warm until serving alongside burgers.
Chicken Burger
Make the sauce: in a small bowl, combine mayonnaise, mustard, and hot sauce (if using). Season to taste with a pinch of salt and pepper. Refrigerate until assembly.
Prepare aromatics and binder: finely grate the yellow onion and squeeze out excess moisture using a clean towel or paper towels. Place grated onion into a mixing bowl with ground chicken, bread crumbs, egg, Worcestershire sauce, minced garlic, smoked paprika, kosher salt, and black pepper.
Gently mix the chicken mixture with your hands or a spoon until just combined. Avoid overworking to keep burgers tender. Divide into 4 equal portions and form 4 patties about 3/4 inch thick, making a slight shallow indentation in the center of each patty to prevent doming while cooking.
Heat a large skillet or cast-iron pan over medium-high heat. Add vegetable oil and heat until shimmering. When hot, place patties in the pan without overcrowding. Cook 4–5 minutes on the first side until golden brown and a crust forms.
Flip patties and reduce heat to medium. Continue cooking 4–6 minutes until internal temperature reaches 165°F (74°C). If patties brown too quickly, reduce heat and cover for a minute to finish cooking through. Transfer cooked patties to a plate and tent loosely with foil to rest for 3–4 minutes.
Assemble burgers: spread about 1 tablespoon of sauce on the bottom bun. Place a lettuce leaf, then a chicken patty, top with a tomato slice, two pickle slices, and the requested white onion rings (arrange to preference). Add more sauce to the top bun if desired, then close the burger. Serve immediately with warm ribs on the side.
Optional/Finishing
If you prefer extra glaze on the ribs, reheat briefly with additional barbecue sauce before serving. Offer extra white onion rings on the side if requested.
