Method

Prepare chicken

Season

Preheat oven to 200°C (400°F). Pat the quarter chicken dry with paper towels. Rub olive oil over the skin and then mix smoked paprika, garlic powder, onion powder, salt and black pepper; rub this spice mix evenly over the skin and underside.

Roast

Place the seasoned quarter chicken on a baking tray skin-side up. Roast in preheated oven for 35–40 minutes, or until internal temperature reaches 74°C (165°F) at the thickest part and skin is golden and crisp. If skin browns too quickly, tent loosely with foil for final minutes.

Rest

Remove chicken from oven and let rest 8–10 minutes. Transfer to a cutting board and separate the thigh from the leg joint if desired; keep warm.

Prepare pulled pork

If pulled pork is refrigerated, gently reheat in a saucepan over low heat with apple cider vinegar and 2 tablespoons of barbecue sauce, stirring occasionally until warmed through (about 6–8 minutes). If using freshly cooked pulled pork, mix in apple cider vinegar and 2 tablespoons barbecue sauce and warm briefly. Taste and adjust seasoning.

If pork is very wet, simmer briefly to thicken sauce to a sticky coating, then fold in the final 1 tablespoon barbecue sauce off heat to finish glossing the meat.

Assemble sandwich

Slice the Kaiser roll horizontally and lightly toast cut sides in a skillet or under broiler until golden (about 1–2 minutes). Spread the softened butter on the cut sides immediately after to melt slightly.

On the bottom half of the roll, place the roasted chicken quarter meat (shredded or halved pieces) so the portion fits comfortably. Spoon the warmed, sauced pulled pork on top of or beside the chicken, aiming for an even combination of both proteins in each bite (about 150 g pulled pork total).

Top the meats with 1/2 cup coleslaw, arrange pickle slices, and drizzle yellow mustard sparingly over the slaw or top bun interior.

Cap with the top half of the Kaiser roll and press gently. If desired, return to skillet for 30–45 seconds per side to press and warm the sandwich slightly (optional).

Finish & serve

Cut sandwich in half if desired and serve immediately while hot. Offer extra barbecue sauce and napkins on the side.
