Bring to temperature & dry

Remove the top sirloin from the refrigerator 30–45 minutes before cooking so it comes closer to room temperature. Pat both sides thoroughly dry with paper towels — a dry surface promotes better browning.

Season

Evenly sprinkle the kosher salt, black pepper, garlic powder, and onion powder over both sides of the steak. Pat the seasonings into the meat so they adhere.

Pan & Finish

Preheat pan

Place a heavy skillet (preferably cast-iron) over medium-high heat and let it get very hot for 3–5 minutes. When a drop of water skitters and sizzles vigorously, the pan is ready.

Sear the steak

Add the neutral oil to the hot pan and swirl to coat. Carefully place the steak in the pan and do not move it for 2.5–3.5 minutes to form a deep brown crust. Flip and sear the other side for 2.5–3 minutes. Times are for a 1" (2.5 cm) thick steak; increase time slightly for thicker cuts.

Baste and finish

Reduce heat to medium. Add the butter, crushed garlic, and herb sprigs to the pan. Tilt the pan slightly and use a spoon to baste the melted butter continuously over the top of the steak for 1–2 minutes while cooking to your desired doneness. For target internal temperatures: 120–125°F rare, 130–135°F medium-rare, 140–145°F medium. Use an instant-read thermometer inserted into the thickest part to check.

Rest and serve

Transfer the steak to a cutting board and tent loosely with foil. Let rest for 5–10 minutes (rest time equals roughly 5–7 minutes for a 1" steak). Slice against the grain into thin slices. Sprinkle with optional finishing flaky salt if desired and serve immediately.
