Rinse starch
Place the cut wedges in a large bowl and cover with 4 cups cold water. Swirl and let sit 10 minutes, then drain in a colander. Refill with fresh cold water, agitate, then drain again. For crispier fries, soak the cut potatoes in cold water with ice cubes for 30 minutes (or up to 2 hours) to remove excess starch; then drain.
Dry thoroughly
After draining, spread the wedges on a clean kitchen towel or paper towels and pat very dry. Removing surface moisture is essential for good browning.
Seasoning & Roasting
Toss with oil and seasonings
Return the dry wedges to the large bowl. Add 2 tablespoons olive oil, 1 teaspoon kosher salt, 1 teaspoon black pepper, 1 teaspoon garlic powder, and 1 teaspoon sweet paprika. Toss thoroughly so each wedge is evenly coated.
Arrange on sheet
Line a baking sheet with parchment paper or a silicone liner. Spread the seasoned wedges in a single layer with space between pieces (crowding steams them and prevents crisping). If necessary, use two sheets and roast in batches.
Roast
Roast in the preheated 425°F (220°C) oven for 20 minutes. After 20 minutes, remove the sheet, flip each wedge with a spatula to promote even browning, and rotate the pan front to back. Return to the oven and roast another 12–18 minutes until fries are deep golden and edges are crisp. Total roast time ~32–38 minutes depending on thickness and oven.
Crisp finish (optional)
For extra crispness, increase oven to 450°F (230°C) for the last 4–6 minutes, watching carefully to avoid burning.
Finishing & Serving
Season and garnish
Remove fries from the oven and immediately sprinkle with an additional pinch of kosher salt to taste. If using, toss warm fries with 2 tablespoons grated Parmesan and 1 tablespoon chopped fresh parsley so the cheese melts slightly and the parsley brightens the flavor.
Serve hot with your favorite dipping sauces such as ketchup, aioli, or mustard. Leftovers can be reheated on a baking sheet at 400°F (200°C) for 8–10 minutes to re-crisp.
