Bring to room temperature

Remove the racks from the refrigerator 30–45 minutes before cooking so they come to near room temperature. This helps them cook evenly.

Preheat oven

Preheat the oven to 425°F (220°C). Position a rack in the middle of the oven.

Prepare seasoning

Pat the racks dry with paper towels. Season both sides generously with the kosher salt and freshly ground black pepper, rubbing it into the meat.

Make herb-garlic paste

In a small bowl, combine the minced garlic, chopped rosemary, chopped thyme, Dijon mustard, olive oil, and lemon zest (if using). Stir to form a coarse paste.

Sear the lamb

Heat a large ovenproof skillet (cast iron preferred) over medium-high heat until very hot. Add the neutral oil. When the oil is shimmering, place the racks fat-side down and sear until deeply golden brown, about 2–3 minutes. Turn and sear the other side briefly for 1 minute to color the meat. Use tongs to hold and sear the rounded bones briefly if needed for even browning.

Brush with herb paste

Remove the skillet from heat. Using a spoon or brush, evenly coat the seared racks with the herb-garlic-Dijon paste on the meat side (not the bones). Press gently so the paste adheres.

Roast

Place the skillet with the racks in the preheated oven. Roast until the internal temperature reaches your desired doneness: about 15–18 minutes for medium-rare (120–125°F / 49–52°C after resting), 18–22 minutes for medium (130–135°F / 54–57°C). Use an instant-read thermometer inserted into the thickest part of the meat, not touching bone.

Finish with butter (optional)

In the last 2 minutes of roasting, dot the top of each rack with small pieces of unsalted butter to melt over the herb coating for gloss and flavor. Return to oven for the remainder of roasting time.

Rest

Remove the racks from the oven and transfer to a cutting board. Tent loosely with foil and let rest for 10 minutes. Carryover cooking will raise the internal temperature about 5°F (2–3°C).

Carve and serve

Using a sharp knife, slice between the bones into individual chops (about 1–1½-inch thick per chop) or serve as whole racks. Serve immediately.
