Prepare glass (optional salted rim)
If you prefer a salted rim, run a lime wedge around the outer edge of a chilled coupe or martini glass, then dip the rim into a shallow dish of coarse salt. Set the glass aside.
Juice limes
Roll fresh limes on the counter to loosen juices and cut. Measure 1 oz fresh lime juice (about 1 medium lime). Strain if desired to remove pulp/seeds.
Build and shake
In a cocktail shaker, add 6 ice cubes, 2 oz Sauza blanco tequila, 1 oz fresh lime juice, and 0.5 oz simple syrup. Secure the lid and shake vigorously for 10–15 seconds until the shaker is cold to the touch and well diluted.
Double strain and serve
Double strain the cocktail into the prepared chilled coupe/martini glass (use a Hawthorne strainer and a fine mesh strainer or the shaker spout) to remove ice shards and any pulp. Do not serve on the rocks — serve 'up'.
Garnish
Float or perch a lime wheel or wedge on the rim of the glass. Serve immediately.
