Prepare lettuce

Wash romaine leaves thoroughly, spin or pat dry, then tear into bite-sized pieces. Place in a large salad bowl and chill briefly if desired.

Add croutons and cheese

Add croutons and 1 tablespoon freshly grated Parmesan to the bowl with the lettuce. Hold back additional cheese for topping if desired.

Season

When dressing is ready, toss the lettuce, croutons, and dressing together until evenly coated. Finish with a sprinkle of extra Parmesan and freshly ground black pepper to taste.

Mince anchovy and garlic

Using a chef's knife, finely mince the anchovy fillets into a paste. Then mince the garlic. Alternatively, mash both together with a fork or use the side of the knife to smear them into a paste — this helps the flavors disperse evenly.

Combine base ingredients

In a medium bowl, whisk together the mayonnaise and Greek yogurt (or sour cream) until smooth. Add the anchovy-garlic paste, lemon juice, Dijon mustard, and Worcestershire sauce; whisk to combine.

Emulsify with oil

Slowly drizzle the olive oil into the bowl while whisking briskly to create a slightly thick, glossy dressing. This emulsification will make the dressing cling to the lettuce.

Finish dressing

Stir in the 2 tablespoons finely grated Parmesan and season with salt and freshly ground black pepper to taste. Taste and adjust lemon, salt, or Worcestershire if needed. If dressing is too thick, thin with up to 1 tablespoon water or lemon juice.
