Method
1000 Island Dressing
Make the dressing
In a small bowl combine mayonnaise, ketchup, sweet pickle relish, minced shallot, apple cider vinegar, hot sauce, sugar, and lemon juice. Whisk until smooth. Season with salt and black pepper to taste (about the amounts listed). Cover and refrigerate at least 15 minutes to let flavors meld while you prepare the burger.

Form the patty
Gently shape the 7 oz ground beef into a patty about 3.5–4 inches in diameter and roughly 3/4 inch thick. Make a slight dimple in the center with your thumb to help the patty cook evenly. Do not overwork the meat. Season both sides evenly with kosher salt and freshly ground black pepper.
Cook the patty
Heat a large skillet or cast-iron pan over medium-high heat until very hot. Add 1 tsp vegetable oil and 1 tbsp unsalted butter; swirl to coat. Place the patty in the pan and cook undisturbed for 3–4 minutes to develop a brown crust. Flip and cook another 3 minutes for medium (adjust 1–2 minutes less for rare or more for well-done). In the last 1 minute of cooking, place a slice of aged cheddar on the patty, cover the pan briefly to melt the cheese.
Rest the patty
Transfer the cooked patty to a plate and loosely tent with foil for 3–4 minutes to rest and redistribute juices.
Bun & Assembly
Assemble the Buzz Burger Deluxe
Spread about 1.5–2 tablespoons of the prepared 1000 Island dressing on the bottom half of the toasted bun. Place the iceberg lettuce leaf over the dressing, then set the rested cheddar-topped patty on the lettuce. Top the patty with two slices of tomato, three rings of red onion, and three dill pickle slices. Spoon an additional 1 tablespoon of 1000 Island over the top of the pickles (or to taste). Cap with the top bun.
Serve
Serve immediately with fries or a side of your choice. If desired, provide extra 1000 Island dressing on the side for dipping.
