Prepare artichokes

Trim and prevent browning

Rinse each artichoke under cold water. Using a sharp knife, cut about 1 inch off the top of the artichoke to remove the pointed tips. Trim the stem so the artichoke sits flat (leave about 1/2 inch of stem) and peel the stem of tough skin with a vegetable peeler. Rub all cut surfaces with the halved lemon to prevent browning.

Remove thorny tips (optional)

If you prefer, use kitchen shears to snip the sharp tips from the outer leaves. This is cosmetic but helpful if serving to guests or children.

Cook artichokes (hot) or cool for cold service

Place the trimmed artichokes in a large pot. Add 2 cups water, the juice of the remaining lemon (squeeze into the pot), and 1 tablespoon coarse salt. The liquid should cover the bottom and come up around the artichokes — artichokes are typically steamed; if your pot is wide enough, add more water so they sit in a few inches of liquid but are not fully submerged. Bring to a boil over high heat, then reduce to a simmer, cover, and cook until a leaf from the middle pulls out easily and the base (choke area) is tender when pierced with a knife, about 25–40 minutes depending on size.

For cold service: when cooked through, remove artichokes with tongs and immediately plunge into an ice bath to stop cooking and preserve color. Drain well and refrigerate until cold, 1–2 hours. For hot service: drain and serve immediately, keeping warm until service.

Prepare drawn butter

In a small saucepan, melt 8 tablespoons unsalted butter over low heat slowly so it separates. Spoon off and discard any foam from the surface if desired to clarify slightly, or leave as-is for a simple drawn butter. Keep the butter warm but not boiling. Stir in 1 tablespoon lemon juice and 1 teaspoon salt. Taste and adjust seasoning. Keep warm until serving.

Prepare mayonnaise dipping sauce

In a small bowl, combine 1 cup mayonnaise, 1 teaspoon Dijon mustard, 1 teaspoon lemon juice, the grated garlic clove, 1 teaspoon salt, and 1 teaspoon black pepper. Whisk until smooth. Taste and adjust acidity or seasoning. Refrigerate until ready to serve. For a lighter sauce, fold in 1–2 tablespoons water or milk to loosen.

Serve

Arrange hot or chilled artichokes on a platter. Serve with small bowls of warm drawn butter and mayonnaise dipping sauce. Optionally drizzle a little extra melted butter over hot artichokes and sprinkle chopped parsley for color.

To eat: pull off individual leaves, dip the base into drawn butter or mayonnaise, scrape the soft inner flesh with your teeth, and discard the tough tip. When you reach the center, remove the fuzzy choke with a spoon, then enjoy the tender heart.
