Preparation
Melt Chocolate and Butter
In a microwave-safe bowl, combine the bittersweet chocolate and unsalted butter. Microwave on medium power in 30-second intervals, stirring in between, until melted and smooth.
Mix Eggs and Sugar
In a separate bowl, whisk together the large eggs, egg yolks, and granulated sugar until pale and slightly thickened. Add the vanilla extract and mix well.
Combine Mixtures
Gradually pour the melted chocolate mixture into the egg mixture, stirring continuously until fully combined.
Add Dry Ingredients
Sift in the all-purpose flour and salt. Gently fold the mixture until no flour streaks remain, being careful not to overmix.
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling them about three-quarters full.
Bake
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, until the edges are firm but the center is soft.
Serving
Cool and Serve
Remove from the oven and allow to cool for 1 minute. Run a knife around the edges to loosen, then carefully invert each ramekin onto a plate. Serve immediately with a scoop of vanilla ice cream on the side.
