1. Prepare the Potatoes

Peel and grate the Russet potatoes into a large bowl. Rinse them thoroughly in cold water to remove excess starch. Drain and press out as much moisture as possible using a clean kitchen towel.

2. Mix the Filling

In a separate bowl, mix together the shredded cheddar cheese, chopped green onions, and crumbled bacon. Set aside.

3. Form the Hash Browns

In a large mixing bowl, combine the grated potatoes with salt and black pepper. Take a handful of the potato mixture and flatten it in your palm, making a small patty. Place a spoonful of the filling in the center and fold the edges over to encase the filling. Shape it into a round, flat patty.

4. Fry the Hash Browns

Heat oil in a large frying pan over medium-high heat. Once hot, carefully place the stuffed hash browns in the pan. Fry for about 4-5 minutes on each side, or until golden brown and crispy. Drain on paper towels.

5. Serve

Serve hot with your choice of dipping sauce or sour cream.
