Prepare the Salmon
Season the King Salmon fillets with salt and black pepper on both sides.
Sear the Salmon
In a large skillet, heat olive oil over medium-high heat. Add the salmon fillets skin-side down and cook for about 4-5 minutes per side, or until cooked to your desired doneness. Remove from skillet and keep warm.
Make the Champagne Sauce
In the same skillet, add the chopped shallots and sauté for 2-3 minutes until translucent. Pour in the champagne and let it simmer for about 5 minutes, allowing it to reduce by half.
Finish the Sauce
Stir in the heavy cream and let the sauce simmer for an additional 3-4 minutes until it thickens. Add the chopped dill and lemon juice, and stir to combine.
Serve
Plate the salmon fillets and drizzle the champagne sauce over the top. Serve immediately.
