Chill the pitcher
Place a large pitcher (about 2.5–3 quart) in the refrigerator or fill it with ice water for 10 minutes to chill while you prepare ingredients.
Prepare fresh watermelon juice: cut a seedless watermelon into chunks and puree in a blender until smooth (about 4–6 cups of chunks yields ~3 cups juice). Strain through a fine-mesh sieve into a bowl, pressing solids to extract juice. Discard pulp.
Measure and combine the spirits and mixers: pour 12 oz Sauza Blue Tequila, 12 oz watermelon margarita mix, 3 cups strained fresh watermelon juice, 3 oz fresh lime juice, and 3 oz triple sec into the chilled pitcher.
Sweeten and balance: add 2 oz simple syrup to the pitcher. Stir thoroughly and taste; if you prefer sweeter, add an additional 1/2–1 oz simple syrup, or more lime juice if you prefer brighter acidity.
Add ice to chill: add 4 cups of ice to the pitcher and stir for 20–30 seconds to rapidly chill and slightly dilute the cocktail to proper strength.
Garnish & Finish
Prepare rims (optional): if salting the rim, pour the 2 tablespoons coarse salt onto a shallow plate. Rub a lime wedge around the rim of each glass, then dip the glass rim into the salt to coat. Set glasses aside.
Add fruit and ice to the pitcher: add the remaining 4 cups of ice to the pitcher (if serving immediately, keep some ice out to avoid over-diluting). Add 2 cups fresh watermelon cubes and 6 lime wheels into the pitcher so fruit infuses the drink and looks attractive.
Serve: pour the margarita into prepared glasses over fresh ice if desired, making sure each glass gets some watermelon cubes and a lime wheel. Garnish each glass with an additional lime wedge or small watermelon wedge on the rim.
Storage/hold time: keep pitcher refrigerated for up to 2 hours before serving. If holding longer, keep additional ice separate and add just before serving to avoid excessive dilution.
