Chill glass

Place a highball or large copa glass in the freezer for 5–10 minutes or fill it with ice and water to chill while you prepare ingredients.

Fill the chilled glass about three-quarters full with fresh ice cubes (roughly the 1 cup of ice).

Pour 2 oz dry gin over the ice.

Add 0.75 oz Elske tonic syrup directly into the glass. If you prefer a lighter tonic flavor, reduce to 0.5 oz; for stronger, increase to 1 oz.

Add 0.5 oz fresh lime juice to brighten the drink (about half a lime).

Top gently with 4 oz cold sparkling water. Pour slowly down a bar spoon if you want to preserve more carbonation.

Give the drink one gentle stir (2–3 revolutions) to integrate the syrup, gin, and lime with the tonic water without flattening the bubbles.

Garnish & Finish

Rub the lime wedge around the rim of the glass, then drop the wedge or a lime wheel into the drink.

Optional: Add a lime twist over the glass to express oils, and/or tuck a small sprig of rosemary or thyme into the drink for aroma.

Serve immediately while cold and effervescent.
