Place the bottle in the refrigerator for 2–3 hours before serving to reach a serving temperature of about 10–12°C (50–54°F). If short on time, place bottle in an ice bucket filled with ice and water for 20–30 minutes.

Chill

Examine the bottle for proper cork integrity and labels. Château Margüi Rosé 2016 is an aged rosé — check that the cork is intact and there are no signs of leakage or oxidation (excessive browning of the wine).

Inspect

If you'd like to open aromatics and remove any sediment (rare for rosé but possible for older bottles), decant gently into a clean decanter for 10–20 minutes before serving.

Decant (optional)

Use a waiter’s corkscrew to remove the foil and extract the cork. For an older vintage cork, work slowly and steadily to avoid crumbling. Wipe the bottle neck with a clean cloth after removing the cork.

Open the bottle

Pour a small tasting measure (30–60 ml) to check aroma and flavor. Then fill glasses about one-third full (about 120–150 ml per glass) so aromas can develop. Hold the glass by the stem to avoid warming the wine.

Serve

Appearance: Note a pale to medium salmon pink color typical of Provençal rosé, possibly showing a touch of deeper hue due to bottle age.

Aroma: Swirl gently and sniff. Expect delicate red fruit (strawberry, raspberry), floral notes, and subtle herbal/Provencal garrigue hints derived from Cinsault and Grenache.

Palate: Taste for a dry, balanced profile with red fruit flavors, moderate acidity, and a gentle savory/earthy finish. Older vintages may show more complex tertiary notes (dried fruit, tea, minerality).

Pairing: Serve with light seafood (grilled shrimp, seared scallops), niçoise salad, chèvre goat cheese, light charcuterie, or Provençal vegetable dishes. Allow food to be slightly chilled or at room temperature to complement the wine’s acidity.

Consumption window: Château Margüi rosés are often best consumed within a few years of vintage, but a well-made 2016 may still be enjoyable now—drink within 1–2 years of opening for best freshness. Reseal and refrigerate any remaining wine and consume within 2–3 days.

Glassware: Use a tulip-shaped or standard white/rosé wine glass to concentrate aromas while allowing a moderate surface for the wine to breathe.

Temperature monitoring: If wine warms above 14°C (57°F) while serving, chill briefly in an ice bucket for 5–10 minutes before continuing.

Storage of leftovers: Recork or use a vacuum stopper, refrigerate, and consume within 2–3 days. Older vintages may lose subtle tertiary aromatics more quickly once opened.
