Prep
Drain and dry mozzarella
Remove mozzarella balls from their packing liquid and place on paper towels or a clean kitchen towel. Pat gently to remove excess moisture so the dressing adheres better.
Wash and dry tomatoes and basil
Rinse cherry tomatoes and basil leaves under cool water. Pat dry thoroughly. Trim any large basil stems so leaves lay flat on the skewer.
Assemble Kabobs
Thread ingredients onto skewers
Take one wooden skewer or toothpick and thread in order: 1 cherry tomato (rounded side out), 1 fresh basil leaf (folded if large, with the stem trimmed), then 1 mozzarella ball. Repeat for all skewers. Aim for a neat, alternating presentation so each skewer shows tomato, basil, and cheese.
Dressing & Finish
Make simple dressing
In a small bowl whisk together extra-virgin olive oil, balsamic glaze, lemon zest (if using), sea salt, and black pepper until combined. Taste and adjust salt or glaze to preference.
Dress the kabobs
Arrange kabobs on a serving platter. Drizzle the olive oil mixture evenly over the skewers, then drizzle additional balsamic glaze decoratively (or serve glaze on the side for dipping).
Final seasoning
Sprinkle a light pinch of extra sea salt and freshly ground black pepper over the platter if desired. Serve immediately at room temperature for best flavor.
