Brownie batter dip

Method

Brownie batter dip

1

Soften and combine fats

Place the 8 oz softened cream cheese and 4 tbsp softened unsalted butter in a large mixing bowl. Use a handheld mixer or stand mixer fitted with the paddle attachment to beat the cream cheese and butter together on medium speed until completely smooth and homogenous, about 1 to 2 minutes. Scrape down the bowl once to ensure even mixing.

2

Incorporate sugar and cocoa

Add the 1 cup packed light brown sugar, 2 tbsp unsweetened cocoa powder, 1 tsp vanilla extract and a pinch of salt to the whipped cream cheese mixture. Beat on low speed at first to prevent sugar dust, then increase to medium-high and mix until the sugar is fully incorporated and the mixture resembles thick brownie batter, about 2 to 3 minutes. Scrape the bowl and paddle as needed.

3

Adjust consistency

If the dip seems too thick to scoop, add milk or heavy cream 1 tablespoon at a time (up to the 2 tbsp listed) and mix on low until you reach a smooth, scoopable consistency similar to thick frosting. Do not over-thin — the dip should cling to dippers.

4

Fold in chocolate chips (optional)

Fold in 1/4 cup mini chocolate chips with a spatula so they are evenly distributed without breaking the dip's texture. This step is optional but adds chocolate pockets like brownie batter.

5

Transfer the dip to a serving bowl, cover tightly, and chill in the refrigerator for at least 30 minutes to let flavors meld and the texture firm slightly. You can serve immediately if short on time, but chilling improves flavor and scoopability.

6

Serve

Serve the brownie batter dip with about 4 cups of assorted dippers such as pretzels, graham crackers, vanilla wafers, sliced apples, or strawberries. Provide small spoons or spreaders if desired.

7

Storage

Store any leftovers in an airtight container in the refrigerator for up to 5 days. Stir briefly before serving; if too firm after chilling, let sit at room temperature for 10 minutes before serving.
