In a large pot, heat 12 cups of water to about 165°F (74°C). Add the Pilsner and Caramel malts to the water, stirring to ensure there are no dry spots. Maintain a temperature of around 150°F (65°C) for about 60 minutes.

Mashing

After mashing, drain the liquid (wort) into another pot. Bring the wort to a boil and add the Saaz and Hallertau hops. Boil for 60 minutes, adding half of the hops at the start and the other half with 15 minutes remaining.

Boiling

After the boil, cool the wort rapidly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

Cooling

Transfer the cooled wort to a sanitized fermentation vessel and pitch the lager yeast. Seal with an airlock and let it ferment at a cool temperature (about 50°F or 10°C) for 2 weeks.

Fermentation

After fermentation is complete, dissolve the priming sugar in a small amount of boiling water. Add this mixture to the beer, then transfer the beer into sterilized bottles. Cap the bottles.

Bottling

Let the bottles condition at room temperature for about 1-2 weeks. After conditioning, chill the beer in the refrigerator before serving.
