Crush the Merlot grapes in a large fermentation vessel to release their juices.

Preparing the Grapes

Dissolve one Campden tablet in a small amount of water and add it to the crushed grapes to sterilize the mixture.

Sterilizing the Equipment

Dissolve the sugar in warm water and add it to the grape mixture. Stir well to combine.

Adding Sugar

Sprinkle the wine yeast over the grape mixture and gently stir it in. This will initiate fermentation.

Adding Yeast

Cover the fermentation vessel with a clean cloth and let it sit in a warm, dark place for about 7-10 days, stirring daily.

Fermentation Process

After fermentation is complete, press the mixture to separate the liquid from the solids. Use a fine mesh strainer or a wine press.

Pressing the Wine

Transfer the liquid into clean glass bottles or a fermentation carboy. Seal it with an airlock and store it in a cool, dark place for at least 6 months.

Aging the Wine

After aging, siphon the wine into clean bottles, leaving some space at the top. Seal with corks.

Bottling the Wine

Let the bottled Merlot age for an additional 6 months to enhance its flavors before tasting.
