In a large bowl, combine the warm milk, sugar, and yeast. Let it sit for about 5 minutes until frothy. Add flour, salt, and eggs, mixing until a dough forms. Knead for about 5-7 minutes until smooth.

Roll out the dough into a rectangle and place softened butter in the center. Fold the dough over the butter, seal the edges, and roll out again. Repeat this folding and rolling process 3 times.

Chill the Dough

Wrap the dough in plastic wrap and refrigerate for at least 2 hours, or overnight for best results.

Shape the Croissants

Roll out the chilled dough into a large rectangle. Cut into triangles. Place a spoonful of almond paste at the base of each triangle, roll up tightly, and shape into a crescent.

Proof the Croissants

Place the shaped croissants on a baking sheet lined with parchment paper. Cover and let rise in a warm area for about 1 hour until doubled in size.

Preheat the oven to 375°F (190°C). Bake the croissants for 20-25 minutes until golden brown. Allow to cool slightly.
