Prepare the Dates
In a bowl, combine the pitted dates and boiling water. Stir in the baking soda and let it sit for about 15 minutes until the dates soften.
Make the Batter
Preheat your oven to 180°C (350°F). In a mixing bowl, cream the unsalted butter and brown sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Combine Ingredients
Mash the softened date mixture and fold it into the butter and sugar mixture. In a separate bowl, sift together the flour, baking powder, and salt. Gradually fold the dry ingredients into the wet ingredients until just combined.
Bake the Pudding
Pour the batter into a greased baking dish and bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
