Prepare the Vegetables
Wash and chop the zucchini, bell peppers, and eggplant into bite-sized pieces. Halve the cherry tomatoes and slice the red onion into thin wedges. Mince the garlic cloves.
Sauté the Vegetables
In a large skillet, heat a tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then, add the red onion and cook for another 2-3 minutes until softened.
Add Remaining Vegetables
Stir in the zucchini, bell peppers, and eggplant. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are tender.
Finish with Tomatoes
Add the cherry tomatoes and season with salt and pepper to taste. Cook for an additional 3-5 minutes, just until the tomatoes are warmed through.
