Preparation of Milanesa

Prepare the Meat

Pound the filet mignon pieces to about 1/4-inch thickness using a meat mallet. Season both sides with salt and black pepper.

Set Up Breading Station

In three separate shallow dishes, place the flour in one, beaten eggs in the second, and breadcrumbs in the third.

Bread the Meat

Dredge each piece of filet mignon in flour, shaking off excess. Dip into beaten eggs, allowing excess to drip off, and finally coat with breadcrumbs, pressing gently to adhere.

Fry the Milanesa

Heat olive oil in a large skillet over medium-high heat. Once hot, add the breaded filet mignon pieces and cook for about 3-4 minutes on each side until golden brown and cooked through.

Drain and Serve

Remove the cooked milanesa from the skillet and drain on paper towels. Serve hot with 'pure mixto' (mixed mashed potatoes) on the side.
