Preparation
Prepare the Spinach Mixture
In a large bowl, combine chopped spinach, minced garlic, finely chopped onion, salt, and black pepper. Mix well.
Make the Batter
In another bowl, whisk together flour, baking powder, and eggs until smooth. Gently fold this into the spinach mixture until just combined.
Heat the Oil
In a deep skillet or frying pan, heat the olive oil over medium heat until hot.
Fry the Buñuelos
Drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until golden brown.
Drain and Serve
Once fried, remove the buñuelos and place them on a paper towel to drain excess oil. Serve hot with 'Bunbury' sauce.
