Sear the Lamb

In a large Dutch oven, heat the olive oil over medium-high heat. Season the lamb shoulder with salt and black pepper, then sear it on all sides until browned. Remove the lamb and set aside.

Sauté Vegetables

In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes.

Add Liquids

Pour in the red wine, scraping up any browned bits from the bottom of the pot. Let it simmer for about 5 minutes, then add the broth, rosemary, and thyme.

Braised Cooking

Return the lamb to the pot, cover, and reduce the heat to low. Let it braise for 2.5 to 3 hours, or until the lamb is tender and easily pulls apart.

Add Mozzarella

In the last 15 minutes of cooking, sprinkle the shredded mozzarella cheese over the lamb and cover the pot again. Allow the cheese to melt before serving.

Once done, remove the lamb from the pot, shred it, and serve it with the vegetables and sauce, garnished with extra rosemary if desired.
