Boil the Eggs

In a pot of boiling water, gently add the eggs and boil for 6-7 minutes for soft-boiled or 9-10 minutes for hard-boiled eggs. Once done, transfer them to an ice bath to cool.

Prepare the Sausage Mixture

In a bowl, mix the sausage meat with salt and black pepper until well combined.

Wrap the Eggs

Peel the cooled eggs and flatten a portion of the sausage mixture in your hand. Place the egg in the center and wrap the sausage around it, ensuring it is completely covered. Repeat with the remaining eggs.

Coat the Eggs

Dredge each wrapped egg in flour, then dip in beaten egg (if desired), and roll in breadcrumbs until fully coated.

Fry the Eggs

In a deep pan, heat vegetable oil to 180°C (350°F). Fry the eggs in batches until golden brown, about 5-7 minutes. Remove and drain on paper towels.

Serve

Serve warm with mustard on the side, if desired.
