Method
Roll & Spread
Prepare the roll
Split the hoagie roll lengthwise but do not cut completely through; leave a hinge so it holds together. If you prefer the sandwich warm, lightly butter the outside of the roll (1 tsp) and toast it on a griddle or in a skillet over medium heat 1–2 minutes per side until golden; let cool slightly.
Apply spreads
Evenly spread 1 1/2 tablespoons mayonnaise on the bottom half of the roll and the remaining 1 1/2 tablespoons on the top half. If using, spread 1 teaspoon Dijon mustard over the mayonnaise on the bottom half for a touch of tang.
Meats & Cheese
Layer the meats and cheese on the bottom half of the roll, stacking in this order for even distribution and flavor: 2 oz ham (lay flat across the length), 2 oz salami (overlapping the ham), 2 oz bologna, and 2 oz turkey. Fold or fan the slices as needed to cover the roll. Top the meats with 2 slices of Swiss cheese, slightly overlapping.
Melt cheese (optional)
If you prefer the cheese melted, place the assembled bottom half (with meats and cheese) under a broiler for 30–60 seconds or cover and warm in a skillet with a lid over low heat just until the cheese begins to soften. Watch carefully to avoid burning.
Vegetables & Toppings
Prepare sauerkraut
Drain the sauerkraut in a fine mesh strainer and press lightly with the back of a spoon or paper towel to remove excess liquid. Measure about 1/4 cup of drained sauerkraut.
Assemble vegetables
On top of the cheese (or on the top half of the roll if you prefer), layer 1 cup of washed and dried lettuce leaves evenly. Add 4 slices of ripe tomato on the lettuce. Season tomato lightly with a pinch of salt and a grind of black pepper to taste.
Add sauerkraut
Evenly spread the drained 1/4 cup sauerkraut over the tomatoes or directly over the cheese if tomatoes are on the top half, depending on how you prefer to balance moisture. Press down gently so the sandwich holds together.
Finish & Serve
Close the sandwich by bringing the top half of the roll over the fillings. Press gently to compact. Using a sharp knife, cut the hoagie into two equal portions if sharing, or leave whole. Serve immediately with optional pickles or chips.
